Steps to cook the chana masala at home
It would help if you started by washing up chana and soaking them for 8 hours in water. After 8 hours, pressure cook or boil them in 1.5 cups of water and wait for 4 to 6 whistles. You can also add a pinch of soda during this step because it can get cooked just in 2 to 3 whistles. Once your Chanas get cooked, you can move forward with the next step to make gravy.
You can take a pan to the flame and add 1tsp oil and onions to fry until they get brown. When it gets brown, add ginger and garlic paste and saute until mixed up properly. Now add tomatoes and salt as needed and mix them until they get mush and soft. You also need to add turmeric and chili powder and fry with other ingredients until the raw smell comes. When you mix them all, and they become soft, then you can blend this ingredient and make a paste of it.
Now take the plain pan and add 1 to 2 tsp oil and saute one bay leaf, 2-3 cardamom, 2-3 cloves, and cinnamon and fry it. Now add softly cooked or boiled chana and water to the mixture and cook for 5 to 6 minutes until you get the desired consistency.
